In this course we have examined the 15 regions of American Cuisine. We have explored the geography of the land, and read about their histories. We learned how to create a Prep List and Firing sheet and we practiced how to create the defining dishes of each region. Now it’s time to bring it all together.
You’ve just been hired as the Executive Chef at a new 5-star restaurant coming soon to your region. The owners want to display traditional, authentic, and classic dishes of the region. It’s up to you to create a menu for the nightly service!
Here’s what you’ll need to do:
1. Sign-up for a region (Final Region Sign-up Sheet)
2. Research and create a 4-course prix fixe menu for your guests. You may use the recipes from the book, or recipes you found online.
3. Prepare and fill out your Production & Firing Sheet in FULL! (Be sure to note your ingredients appropriately)
